Kolkata – Confluence of Culture

When the British established Kolkata as their stronghold people came here from across the country and the world to test their fortunes. Amongst them, the industrious Chinese immigrants took up work as shoemakers, tannery workers, and other professions deemed “disrespectful” by upper-caste Hindus. They brought with them their cooking techniques. What ingredients they couldn’t find, they adapted with the local ones creating a happy harmony of flavours that is still a favourite of Calcuttans.

Jaipur – Evening Bazaar, Crafts & Cuisine of Old Jaipur

The pink-hued latticed honeycomb of Jaipur’s Hawa Mahal is sure to make you dizzy as you try to take in its breath-taking beauty. Maharaja Sawai Pratap Singh commissioned the five-storeyed marvel in 1799 as a concrete veil from behind which the royal women could watch the city life.
